I am a big fan of coffee in many different forms. I was asked a question about a tradional way of making coffee that is commonly used here in the middle east from ancient times. This tradional way is known as 'turkish coffee' although many believe it did not originate in Turkey at all.

Here are the instructions:

1. Buy a special mix - especialy made for turkish coffee. It should contain a mix of black roast coffee beans, cardimum, and other condiments that can vary according to brand. I would suggest asking labanese resurant owners where they get theirs or looking in arab/labansese markets for this.

Normal coffee does not do justice to this way of preparing coffee.

2. Get a small turkish coffee pot. It should be wider at the bottom and narrow at the top for the coffee to 'go up' when ready.

3. Pour the amount of water needed, cold water, not room temp.

4. Add the coffee right away.

5. Bring to a boil - the coffee should go up the put.

6. Take of and right away put it back - repeat this 'coffee goes up the pot' three times- traditional habit in turkey.

7. Heat a small glass cup by pouring hot water into it and emptying it.

8. Pour the coffee into the pre heated cup.

9. Enjoy your coffee.

Something I like with strong coffee/espresso is a glass of water, to sip between sips of coffee. Makes the coffee taste crisper.

This is exactly how my Israeli friends in Georgia used to talk about making their coffee in the army.
